The summer truffle (or Tuber Aestivum) is a fresh product of the highest quality that can only be consumed during the months when the most well-known and common truffles are not produced, such as the black truffle (winter truffle) or the white truffle (Tuber Magnatum).
It is a truffle less demanding than winter truffle or white truffle, because it does not require soils so demanding and can be produced more easily. As a result, the flavor of summer truffle is more delicate and creamier.
It grows alongside the roots of trees in the Mediterranean forests anywhere between 200 and 1,000 metres above sea level, without requiring soils as demanding as the Perigord, in terms of humidity and soil composition.
Dark on the outside and with a pronounced pyramidal bark, its main difference from the Tuber Melanosporum, black truffle, lies on the inside, which is cream-coloured with hazel tones.
Summer truffle is harvested between May and September, although the most precious examples are those found at the end of August, which is when it reaches its optimum ripeness with all its particular characteristics. However, at the end of June and during the month of July you can already enjoy quality truffles.
The price of summer truffle is much lower than that of winter truffle or black truffle, because it is easier to produce and harvest. Its price is usually about €200 per kilo.
The summer truffle is an exceptional gourmet product and more affordable than the black one. It has a milder flavour and offers a wide range of culinary possibilities. It is the perfect complement to meat, fish and pasta dishes, as well as seasonal products and salads.
