Tuber Uncinatum, known as Autumn truffles, are highly valued on the truffle market due to their scarcity and outstanding flavour.
When it comes to truffles, the first thing we often think of is Tuber Melanosporum or black truffle, which is probably the most well-known and most sought-after. The most knowledgeable of truffle fans might consider more alternatives, such as the white truffle or the summer truffle, but few people have heard of the Tuber Uncinatum, also known as the grey truffle or the Autumn truffle due to its harvest season, originating from Burgundy.
The autumn truffle is very similar in size to the summer truffle, although the colour of its gleba is a little darker, featuring an appearance between black and greyish and ranging from light yellow to different shades of brown. The truffle’s crust features a pyramid shape.
Other characteristics that distinguish it from Tuber Aestivum are its perfume and flavour, which are noticeably more intense. This means the aroma of the Autumn Truffle conjures up similarities with boletus, hazelnuts, butter and spices.
Tuber Uncinatum is sold from September to November, after the summer truffle season and before the black truffle season begins.
Although the autumn truffle also grows in Spain, it is mainly found in other European countries due to needing fewer hours of light and more humidity than those provided by the Mediterranean climate.
The fact that it is a wild truffle dictates its availability in the market, causing the price to vary, ranging from 500 and 1.000 euros per kilo. This scarcity has made it one of the most desired truffles on the market.
In a normal campaign with a large production of wild truffle, Tuber Uncinatum truffle may be around 200€ to 500€/kg.
This precious truffle is the ideal complement in the kitchen, especially if it is used fresh. It combines perfectly with meat, fish, pasta, risottos and vegetables or to flavour an array of other dishes.
As with other truffles, Tuber Uncinatum is rich in protein, potassium, phosphorus, calcium, silicon, copper, iron, sulphur compounds, fatty acids and B vitamins. It also has antioxidant properties.
